Turkey with Pumpkin and Nutmeg 1 Picture

Ingredients

  • 400 g/ 14 oz turkey breast, cut into cubes
  • 350 g/ 12 oz pumpkin, cut into smallish cubes
  • 4 tbsp maple syrup
  • 1 onion, chopped
  • 1 bay leaf
  • 1 sprig fresh thyme
  • 1/2 tbsp nutmeg
  • 6 tbsp cranberry jelly
  • 300 ml/10 fl oz veal stock (or gravy base)
  • 1 tbspvegetable oil
  • Salt, pepper

Preparation

Step 1

Heat the oil in the ActiFry. Add the onions and the seasoned turkey pieces, leave to colour for 5 min.

Add the maple syrup and leave it to caramelise. Add the pumpkin and the nutmeg. Cook for 2 min. Add the liquid and the herbs and cook for 15 min.

Thicken the sauce with the cranberry jelly, leave to cook for 2 minutes and serve.


*Chef Recommendations:*
You can if you like replace the maple syrup with brown sugar.
