FAJIATA STUFFED CHICKEN

Ingredients
- 2 TBS. Oil. (For veggies)
- 1/2 Red Pepper (cut in strips)
- 1/2 Green Pepper (cut in strips)
- 1/2 Yellow Pepper (cut in strips)
- 1 Small Sweet Onion (cut in strips)
- 1 tsp. Salt
- 1 tsp Pepper
- 2 oz. Cream Cheese
- 1/2 Cup Shredded Cheddar Cheese
- 1/2 Cup Shredded Pepper Jack Cheese
- 3 Boneless Skinless Chicken Breasts
- Salt as wanted for Chicken
- 2 tsp. Chili Powder
- 2 tsp. Cumin
- 2 tsp Garlic Powder
- 3 TBS. Oil (for chicken)

Step 1
Heat the oil for veggies in a pan over high heat. Cook the peppers, onion, salt and pepper until slightly caramelized.. Transfer to a bowl, add cream cheese, cheddar and pepper jack cheese stirring until evenly coated. Set aside.
In a separate bowl combine the chicken with salt, chili powder, cumin and garlic, evenly distributing the spices over the chicken.
Slice a pocket in the chicken horizontally and fill the pocket with a heaping spoonful of the veggie/cheese mixture. Press the edges of the chicken together to seal. Repeat with the rest of the chicken.
Heat the oil in a pan over a medium heat. Cook the stuffed chicken for 7-10 minutes on each side until the chicken is fully cooked.
Serve with sour cream, salsa or guacamole! A nice side of Mexican rice is good also.
