Zucchini Cookies

Ingredients

• 3/4 c. butter or oleo
• 1 1/2 c. sugar
• 1 egg
• 1 tsp. vanilla
• 1 1/2 c. grated zucchini
• 2 1/2 c. flour
• 2 tsp. baking powder
• 1 tsp. cinnamon
• 1/2 tsp. salt
• 1 c. chopped nuts
• 1 c. chocolate chips

Preparation

Step 1

Cream butter and sugar. Beat in egg and vanilla. Mix in zucchini. Stir in flour, baking powder, cinnamon and salt. Stir in nuts and chocolate pieces. Drop by heaping teaspoonfuls onto greased cookie sheet. Bake at 350 degrees for 15 minutes or until lightly browned. Cool and sieve with powdered sugar, if desired.
