Ingredients
- 400 g/14 oz boneless, skinless chicken breasts,
- 1 shallot,
- 1 clove garlic,
- 4 large courgettes,
- 10 g/ 1/3 oz fresh tarragon,
- Courgettes flowers,
- 20 ml/ 2/3 fl oz extra virgin olive oil,
- Fine sea salt (to taste)

Preparation
Step 1
Pour the extra virgin olive oil into the ActiFry and heat for 3 minutes. Finely slice the shallot, chop the garlic and dice the chicken breast. Add to the oil.
Fry the chicken for around 5 minutes. Dice the courgettes, add to the meat, salt and cook for another 5 minutes.
Cut the courgette flowers into very thin strips. When the chicken and courgettes are cooked, add the courgette flower strips along with the fresh tarragon leaves.
