  • 2 Tabs butter
  • 1 Can (1lb.) stewed tomatoes
  • 2 chicken bouillon cubes dissolved in 1 1/2 cup boiling water (I use the broth from
  • cooking the chicken)
  • Salt to taste
  • Dash red pepper
  • 1 Pkg. (10) oz) frozen cut okra (recipe calls for broccoli)
  • 2 Cups cut cooked chicken (I cook 3 or 4 chicken breasts)
  • 1/4 cup water
  • 2 Tabs. Flour

Step 1

Saute onions, pepper and garlic in butter in a large skillet until tender, but not brown. Stir in tomatoes. Add chicken broth, salt and red pepper. Cover and cook over medium heat for approx. 10 minutes.
Add okra and cook another 10 minutes. Add chicken. Blend water and flour until smooth. Add a little hot sauce to mixture, then stir mixture into skillet. Cook, stirring constantly until it thickens.
Serve over hot rice or cooked thin noodles. The recipe says it serves 8 ~ I would double for 8!!!!
