Ingredients

  • 2 tbsp. butter
  • 1 lg. onion, finely chopped
  • 2 minced garlic cloves
  • 2 tsp. cumin or 1/2 tsp. curry powder
  • 1/2 tsp salt
  • 2 c. long grain white rice
  • 4 c. chicken bouillon or broth
  • 2 c. frozen peas
  • 4 green onions, thinly sliced
  • chopped fresh dill or coriander

Preparation

Step 1

1. Melt butter in large saucepan set over medium heat.
2. Add onions and garlic.
3. Sprinkle w/ cumin and salt.
4. Saute, stirring often, until onion is soft, about 5 minutes.
5. Stir rice into onion mixture and stir constantly until grains are coated. Add bouillon. Bring mixture to a boil. Cover and reduce heat to low. Simmer gently, without stirring, until rice is almost tender, about 20 minutes.
6. Stir in peas, cover and continue cooking until rice is tender and peas are cooked, about 5 minutes. Remove from heat.
7. Fluff rice w/ a fork and stir in green onion.
8. Sprinkle w/ fresh chopped dill. Serve warm.
