Ingredients

  • Dressing:
  • 2 cans Black-eyed Peas, drained
  • 1 can Pinto Beans, drained
  • 1 can Black Beans, drained
  • 2 cans white corn (Shoepeg), drained
  • 2 Jalapeno peppers (seeded) chopped fine
  • 1 Red Bell pepper, chopped fine
  • 1 Red Onion chopped fine
  • 1 cup sugar
  • 1 cup veg or olive oil
  • 3/4 cup cider vinegar
  • 1 tablespoon water
  • 1 teaspoon salt
  • 1 teaspoon pepper

Preparation

Step 1

In a large bowl combine all ingredients.

Boil: all dressing ingredients, let cool and pour over veggies in bowl.
Allow to marinate for a few hours.

Keeps for along time in refrigerator. The longer you marinate the thicker and better it taste.(over night)

Use Tostitos Scoops or Fritos Scoops.
