Ingredients

  • 2 cups Whole wheat flour
  • 2 Oranges
  • 2 cups Unbleached white flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 egg whites
  • 2 cups sugar or less
  • 1/2 cup chopped nuts
  • 1/4 cup canola oil
  • 2 cups Cranberries, ground or sliced

Preparation

Step 1

Preheat oven to 325°. Grate the rind of the oranges and reserve. Cut oranges in half and squeeze out the juice. Add enough boiling water to juice to make 1 1/2 cups liquid. Combine juice and rind with all other ingredients. Place in 2 lightly oiled 9x5" loaf pans. Bake for 1 hour or until wooden pick inserted in center comes out clean. Makes 2 loaves
