Ingredients

  • 1 cup (125 grams) all-purpose flour
  • 3/4 cup (90 grams) whole wheat flour
  • 1 tablespoon sugar
  • 1 1/2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 2 large (50 grams each) eggs, lightly beaten
  • 1 cup (245 grams) low fat (1%) milk
  • 1 medium (180 grams) apple, peeled and grated
  • 1/3 cup (80 grams) unsweetened applesauce
  • Cooking spray
  • 1/2 cup nonfat plain Greek yogurt
  • 2 teaspoons powdered sugar
  • Garnish: pinch ground cinnamon

Preparation

Step 1

Stir together flours, sugar, baking powder, cinnamon, and salt in a large bowl.

Combine eggs, milk, apple, and applesauce in a small bowl, stirring until well blended. Add the liquid mixture to the dry mixture and stir until just combined. Let rest 10 minutes.

Lightly spray Belgian waffle iron with cooking spray and spoon 3/4 cup batter into center, spreading batter to the edges. Cook 4 to 5 minutes or until the steaming stops and waffles are golden brown. Dollop each serving with 2 tablespoons yogurt. Sprinkle evenly with powdered sugar and ground cinnamon. Serve immediately.
