Ingredients

  • 2 lbs Ricotta, drain overnight, whip until fluffy
  • 1 lb Duram Semolina flour
  • 1 T. salt
  • 2-3 oz olive oil

Preparation

Step 1

Combine and roll into 1/2" rope, use pizza cutter to cut into 1" pieces. Put on floured sheet pan - boil immediately for a few minutes or freeze on sheet pan. When frozen put in ziploc bag - boil 10-12 minutes frozen.
