White Chocolate Bread Pudding

Ingredients
- 2 loaves french bread
- 12 egg yolks
- 6 egg whites
- 1 1/2 pound of white chocolate (morsels work best)
- 1 cup sugar
- 1 teaspoon nutmeg
- 2 teaspoons vanilla
- 1 stick butter
- 2 1/2 cup half-n-half

Preparation
Step 1
Cut french bread into cubes and let sit uncovered overnight to dry out.
Pre-heat oven to 325 and grease 9 x 12 baking dish.
Put two cups of half-n-half over low heat. Add in butter. When butter melts, add in 1 lb white chocolate. When chocolate melts, let cool to room temperature. Be careful to stir consistantly to keep dairy and chocoate from scortching. You can also use double boiler.
Using a blender, whip egg yolks until they turn light yellow, double in size, and start to get a little firm. Add in sugar, vanilla, and nutmeg and blend until combined. Add egg whites and blend again until combined. Add cooled white chocolate mixture slowly blending as you add.
Pour completed mixture over dried bread cubes. When bread has obsorbed about 95% of the mixture, pour into prepared baking dish and bake at 325 for 30 minutes. Turn the oven up to 375 and let bake additional 10 minutes or until top starts to brown.
While bread pudding is baking, over low heat, melt together 1/2 cup half-n-half and 1/2 lb white chocolate stirring consistantly to prevent scortching.
Pour over top of bread pudding when removed from the oven. Let sit for 5 minutes before serving.
