Ingredients

  • 1

    tbsp. olive oil

  • 1

    cup diced onion

  • 1

    cup sliced celery

  • 1

    cup sliced carrot

  • 8

    cups chicken stock (for a stronger flavor, add a couple of bullion)

  • 1

    15 oz can Hunts diced tomatoes with garlic, basil and oregano

  • 1

    small clove of garlic, minced

  • 2

    tsps. dried basil

  • 1

    bay leaf

  • 1

    small zucchini, quartered and sliced

  • ½

    cup chopped spinach (fresh or frozen)

  • ½

    cup dry small pasta (I like ditalini)

  • 1

    13-15 oz can of beans, drained (Cannellini or similar)

Directions

Saute onions, celery and carrot in olive oil until softened; approximately 10 minutes. Add chicken stock, tomatoes, garlic, basil, bay leaf, zucchini and spinach. Simmer for 15 minutes. Add salt and pepper to taste. Add pasta and beans. Cook until pasta is done. Remove bay leaf before serving.
