Ingredients

  • 1 1/2 cups shredded cheese, any kind
  • 1 unbaked pie shell
  • 1 cup filling, (meats and veggies)
  • 1 1/2 cups half and half, (or evaporated milk)
  • 4 large eggs, beaten
  • salt and pepper, to taste
  • seasonings, as desired

Step 1

Sprinkle shredded cheese into unbaked 9" pie shell. Add filling; set aside. Mix together half and half (or 1 can evaporated milk) and seasonings. Gradually stir half and half mixture into eggs. Pour into pie shell. Bake in preheated 350 degree conventional oven for 15 minutes. Reduce temp to 325 and bake an additional 40 to 50 minutes or until knife inserted near center comes out clean and crust is light brown.

MICROWAVE DIRECTIONS:
Use a prebaked, unpricked 9" pie shell.
Sprinkle shredded cheese into baked 9" pie shell. Add well drained filling; set aside. In a 1 qt. glass measuring cup mix together half and half and seasonings. Microwave at full power for 2 1/2 minutes until almost but not quite boiling. Gradually stir half and half mixture into eggs. Pour into alreadsy baked pie shell. Microwave uncovered at 50% (Med low in my microwave) power for 14 to 16 minutes or until knife inserted off-center comes out clean. Give large dishes quarter turns twicw during time at 50%. Center should appear set when done. let stand 10 minutes.
