Ingredients

  • 1 large carrot, peeled and diced
  • 1 T. canola oil
  • 1/2 c. diced celery
  • 1/2 leek, diced
  • 1 garlic clove, minced
  • 3 1/2 c. veggie broth
  • 2 cans white beans, drained and rinsed
  • 1 c. corn
  • 1 bay leaf
  • 1/8 t. salt
  • 1/4 t. pepper

Preparation

Step 1

Saute the carrot in the oil in large pot for 3 minutes. Add celery, leek, and garlic. Cook 2 more minutes. Add rest of ingredients and bring to a boil. Reduce to simmer for 15 minutes.

Remove bay leaf. Transfer half to blender and blend until smooth.

May sprinkle with croutons or bacon bits before serving.
