- 1 T olive oil
- 4 chicken cutlets (3/4 lb. total)
- Salt
- Pepper
- I head of romaine lettuce, chopped
- 1/2 c cubed cheddar cheese
- 1/4 sliced small red onion
- 6 T vinaigrette

Step 1
Cook bacon in a large skillet over medium heat until crisp, 6–8 minutes; remove and crumble. Add olive oil to the skillet. Seasoned chicken cutlets with salt and pepper and cook until cooked through, 2 to 4 minutes per side; slice. Toss with bacon, Romain cheddar cheese, red onion and vinegarette.
