- 6 eggs separated
- 1 1/4 c milk
- 5 T butter melted
- 6 T flour
- 1 t salt
- 2 t sugar
- 1/2 t cream of tarter
- 1/2 c grated cheese (sharp cheddar)

Step 1
For tall standing souffle, wrap buttered foil around top of buttered dish
Separate eggs and preheat oven to 325
Grate cheese
Start butter melting in small pan. Beat egg whites until stiff peaks are formed. Add sugar and cream of tarter slowly. Set aside
Beat egg yolks until light and foamy.
Stir flour into butter with a spring stirring in a saucepan until butter/flour are fully incorporated. Add salt. Gradually add milk stirring constantly heat until bubbling. Cook until mixture is thickened and leaves bottom of pan when stirred. Gradually add flour/milk mix to egg yolks beating together until smooth. Add cheese to it and beat.
Carefully fold in beaten egg whites with spatula into egg mix. pour gently into souffle pan
Bake 40 min until firm and brown.
Devour!
options: Can be modified to add tuna & mushrooms or other additives. Mix chopped additions with half of egg yolk mixture. spread in bottom of pan. Then pour remainder over top.
