Duck Liver Mousse

This recipe came from Maggie Johnston, long-time friend of Mum and Pop's

Ingredients

  • 1 lb Chicken liver (or duck)
  • 1 apple chopped
  • 1 onion chopped
  • 1/4 c madeira
  • 1/2 c whipped butter room temp

Preparation

Step 1

Saute Livers, apple and onion in small amount of butter. leave rare. Add to quisinart and blend, add madeira. let cool.
When cool add 1/2 lb whipped butter, room temp.

Serve with crackers
