Ingredients

  • 1/4 C pecan halves
  • 2 tsp vegetable oil
  • 2 onions, chopped
  • 1 stalk celery, chopped
  • 2 C chicken or vegetable stock
  • 1 C long grain rice
  • 1/2 tsp chili powder
  • salt and pepper
  • chopped toasted pecans (optional)

Preparation

Step 1

In food processor or blender, process pecans until finely ground. In large non-stick skillet, heat oil over medium high heat. Cook onions, celery, and ground pecans, stirring constantly 3 - 5 minutes or until tender crisp; set aside.

In medium saucepan with tight fitting lid, combine stock, rice, cna chili powder; bring to boil over high. Reduce heat to low, cook, covered 20 minutes or until done. Stir in onion nmixture. Season with salt and pepper to taste. Serve sprinkled with toasted pecans.
