This recipe is from Food & Wine, Justin Chapple. The original is with Arctic Char but the sea bass is fantastic. Serve Family style in dish you poach and bake in.

Ingredients

  • 1 c evoo
  • 1/2 c finely chopped fresh dill
  • 1/2 c finely chopped fresh chives
  • 2 tbs lemon zest (from 4 lemons)
  • 1 tbs coarse salt
  • 2 tsp black pepper
  • 2 (1 1/4 lb) chilean sea bass or skinless center -cut arctic char fillets, bones removed.

Step 1

1. Whisk together evoo, dill, chives, lemon zest, salt and pepper in a small bowl. Pour half of mixture into a 13x9 inch baking dish. Add fish in a single layer, and spoon remaining evoo mixture over top. Cover with plastic wrap and refrigerate at least 3 hours or up to overnight.
2. Preheat oven to 350 degrees F. Let fish stand in marinade at room temp 15 mins before baking.
Remove plastic wrap, and bake in preheated oven until fish is just cooked through, 15 to 20 mins. Cut each fillet into 3 pieces, and serve immediately.
