Ingredients
- 1 lb. extra lean ground beef, (93% lean)
- 1/2 cup chopped onion
- 1 can mexicorn
- 16 ounces tomatoes, canned do not drain ( I Like to use Mexican Style Diced tomatoes if I have them)
- 1/2 cup brown rice, uncooked
- 3 teaspoons chili powder, or more
- 1 1/2 teaspoons salt
- 1/8 teaspoon pepper

Preparation
Step 1
Heat oven to 350F. In large skillet, cook and stir onions and ground beef until lightly browned, drain. Adddrained mexicornr; Stir in tomatoes with liquid, rice, chili powder, salt and pepper; heat to boiling.
Pour into 2-quart casserole. Cover; bake 1 hour.
Can stir in a little processed American cheese or velveeta if desired.
