Cherry Roll - No Raise Dough

Yes, this is the dough that we use when making Cherry and Coconut Rolls, Apricot and Poppy! This recipe makes 4 rolls of dough.

Ingredients
- Cherry Coconut Filling:
- 1/2 pound oleo or butter (we use butter)
- 2 pkg. dry yeast - sprinkle on top of 1 cup warm water (not hot!)
- 2 tbsp. sugar (sprinkle this on top of the water with yeast and watch it bubble!)
- 4 cups flour
- 2 egg yolks
- 1 tsp. salt
- 1 lb. bag of grated coconut
- 1 jar of cherries; chopped to your liking (I splash a bit of cherry juice to make it a pretty color - but be careful you don't want it wet.)

Step 1
As mentioned above, dissolve the yeast and sugar in lukewarm water and let rest.
Sift flour, salt and cut in butter (like you would when making pie crust) and add egg yolks. Mix together then add the yeast mixture. Mix well and knead for 5 minutes on a floured surface (yes, bring out your timer and enjoy the burn!). Then divide dough in 4 parts and let stand while you prepare the fillings.
Roll out the dough in granulated sugar (for the cherry coconut rolls) and bake at 350 for 20 minutes.
