Ingredients
- 4 eggs
- 1/4 tsp salt
- 2/3 cup sugar
- 1 tsp vanilla
- 1 cup all purpose flour
- 1 tsp baking poweder
- 1/2 cup unsalted butter, melted
- i tsp lemon zest finally minced

Preparation
Step 1
1. Preheat oven to 400. Brush madeline pan with melted butter and set aside
2. Using mixer, beat eggs wtih salt at medium high speed until foamy Gradually add sugar & beat at medium high to high speed until pale colored & holds a slowly dissolving ribbon when better is lifted. (you cannot over beat at this stage- can take 5 to 10 minute)
3. Add vanilla and blend well.
3. Mix baking powder into flour then fold into egg mixture in 3 stages. Fold melted and cooled butter in 3 stages. Blend in lemon zest.
4. Fill madeline pans 3/4 full. Place pans on baking sheets. Bake for 10 minute until madeline are golden and spring back when touched.
5. remove from oven and turn madeline pans upside down on cooling racks. Cool completely on racks.
Glaze:
3/4 cup powered sugar
1 TBSP freshly squeezed lemon juice
2 TBSP water
Dip each in the glaze coating both sides. Scrap off excess with a dull knife. Place back on cooling rack, scalloped side up until they are cool and glaze is firm.
