Ingredients
- 1/2 c. margarine
- 1/2 c. lightly packed brown sugar
- 1 egg (or 1/4 c. liquid egg substitute)
- 2 tsp. vanilla extract
- 1 c. all-purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt (opt.)
- 1/2 c. quick-cooking rolled oats
- 1/2 c. semi-sweet chocolate chips

Preparation
Step 1
In a mixing bowl, cream together the margarine and sugar until light and fluffy. Add the egg (or egg substitute) and vanilla extract and beat until smooth. In another bowl, combine the flour, baking soda and salt (optional). Stir into creamed mixture, along with the oats and chocolate chips. Preheat oven to 375 degrees. Using 2 teaspoons for each cookie drop onto ungreased cookie sheets. Flatten with a wet fork. Bake until the cookies begins to brown around the edges, about 10 minutes. cool on a rack. Store in airtight container.
