Salmon and Bacon Sandwich with Honey Mustard

Ingredients

  • 1 tbs peanut oil
  • 2 (3 oz) king salmon fillets, skin removed
  • Salt and pepper to taste
  • 2 tbs Dijon mustard
  • 1 tsp honey
  • 2 tbs mayonnaise
  • 4 slices country style bread
  • 1 cup arugula
  • 4 slices cooked bacon
  • 4 slices tomato

Preparation

Step 1

1. Heat oil in a large skillet; season salmon with salt and pepper, then cook for 5 min on each side.

2. Mix Dijon and honey in a small bowl. Spread mayo and honey mustard mix on one side of bread. Top with arugula, bacon, cooked salmon and tomato.
