Ingredients
- 4 medium scallions, white parts only, minced
- 1 pound green peas, fresh or frozen (I always use frozen because it is easier)
- 2 teaspoons mint leaves, chopped
- 1 tablespoon butter
- 1/8 tablespoon sugar
- 1/8 teaspoon black pepper, or to taste
- 1/8 teaspoon table salt, or to taste

Preparation
Step 1
Heat a large saucepan coated with cooking spray over medium heat. Add scallions and cook about 3 minutes, stirring constantly.
Add peas and just enough water to cover them. Increase heat to high and cook peas until tender, about 5 minutes (frozen peas will take only 2 to 3 minutes).
Drain; add mint, butter, pinch of sugar, salt and pepper to taste. Serve immediately
