Ingredients
- 2 cups left over mashed potatoes
- 2 cups self rising flour
- 1 package dry ranch mix
- 2 eggs
- 8 oz shredded cheddar cheese
- 1 1/2 cup milk (add more if mixture looks too dry)
- salt and pepper to taste
- 1 cup of bacon crumbles (or any meat left over cut into small pieces)
- olive oil, vegetable oil or butter for cooking.
- Sour cream for serving

Preparation
Step 1
Mix together potatoes, flour, ranch mix, eggs, cheese, milk, and bacon. Add more milk if needed. Mixture should resemble a lumpy pancake batter.
Heat pan or griddle adding oil to keep from sticking.
Using a 2 oz ladle, pour mixture onto griddle just like you would pancakes.
When bubble form on top, flip over.
When edges are completely dry and it is firm to the touch, remove from the pan.
Serve with sour cream
