Zucchini Cake

Ingredients

• 3 c. zucchini, peeled and ground
• 3 c. sugar
• 1 1/2 c. Wesson vegetable oil
• 4 eggs
• 3 c. flour
• 2 tsp. bakin powder
• 1 c. nuts, chopped
• 1 tsp. soda
• 1 tsp. salt

Preparation

Step 1

combine zucchini, sugar, vegetable oil and eggs. Add flour, baking powder, soda, salt and nuts. Place in a floured tube pan. Bake for 1 1/2 hours at 300 degrees. Allow to cool in the pan before removing. Can be frozen.
