Ingredients
- 5 c. chopped rhubarb
- 1 c. sugar (or to taste)
- 3 c. miniature marshmallows
- 1 (3-oz.) pkg. raspberry or strawberry Jello
- 1 pkg. yellow cake mix

Preparation
Step 1
Spread rhubarb over bottom of greased 9 x 13-inch pan. Sprinkle 1 package Jello over rhubarb. Next sprinkle the sugar over Jello and the marshmallows on top of sugar. Prepare cake mix as directed on package and pour over top. Bake at 350 degrees for 40 to 50 minutes. Serve warm as upside down cake with vanilla ice cream.
