  • 2 cups skim milk
  • 2 eggs
  • 8 teaspoons butter, 2T & 2t. melted
  • 3 1/2 cups all-purpose flour
  • 8 teaspoons sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt

Preparation

Step 1

1. Preheat oven to 400 degrees. Spray two 12- muffin tins with nonstick cooking spray or line with paper cups.
2. In small bowl, combine milk, egg, and melted butter. In larger bowl, combine the flour, sugar, baking powder and salt.
3. Add milk mixture to flour, and stir just until flour disappears; do not overblend. Spoon into muffin tin and bake 20 to 25 minutes or until toothpick comes out clean and mufins are golden brown. Cool on rack for 5 minutes; remove from pan and serve.
