Ingredients

  • 2 Cup Milk
  • -Scald to 225°, cool to 110°
  • 2 Package Yeast
  • 1/2 Cup 90° warm water
  • -Add yeast, tsp sugar, let rise
  • 2/3 Cup Butter
  • 3/4 Cup Sugar
  • 1 1/2 tsp Salt
  • 1/2 tsp Nutmeg
  • 2 Egg
  • 1 lemon
  • -grated & juiced
  • ~8 Cup Flour
  • -Sifted
  • ~Butter
  • ~Brown Sugar
  • Cinnamon
  • Bottom of The Pan
  • 1/4 Cup butter
  • 1/2 Cup Brown Sugar
  • 1/2 Cup Maple Syrup

Preparation

Step 1

Cream Butter, Sugar, Eggs, Lemon, Salt & Spice. Add Milk, Water, & Yeast mixture to cream. Combine mixtures.Add 1/2 Flour and then gradually work the rest in to knead dough. Rise so where the dough is double in size. Knead again. Cut in Half. Roll 1/2in thick, about a 14in by 10in rectangle. Brush with Melted butter, brown sugar, & Cinnamon. Roll Up, Cut in half Twice and then Thirds for each half.

375° Convection 20-30 Minutes

Bottom of the Pan
Bring all ingredients to a near boil split between both pans.
