Ingredients

  • 1 1/2 c. oatmeal
  • 1 c. flour
  • 1 c. brown sugar
  • 1/2 c. vegetable oil
  • 4 c. rhubarb, cut in 1-inch pieces
  • 1 1/2 c. sugar
  • 2 T. cornstarch
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 1 c. water

Preparation

Step 1

Mix together first 4 ingredients. Put 1/2 oatmeal mixture in bottom of 9 x 9-inch square pan. Press firmly. Add 4 cups rhubarb on top of oatmeal mixture. Cook together until thick the remaining ingredients. Let cool, then pour over rhubarb. Bake in 350 degrees oven for 1 hour.
