Ingredients
- 3 eggs, beaten
- 3 c. milk
- 2 2/3 c. flour
- 3 T. melted butter
- 1/2 tsp. baking powder
- 1/3 c. raisins, soaked in hot water for 15 minutes, drained and coated with flour (opt.)
- 1 (8 to 10-qt.) kettle

- 16 -inch square muslin cloth

Step 1
Flour cloth. then place over deep bowl as crock. Pour batter into crock. Draw up sides and secure tightly with string leaving 2-inch gap between string and top of batter. Place bag in kettle (with plate in bottom, placed upside down) in boiling water to cover bag. Keep at rolling boil. Turn after 5 minutesto keep raisins even in batter. Turn in another 5 minutes. Check to keep pot full of water while cooking, turning bag occasionally. (Keep another pan of water boiling on stove to add.) Cook for about 2 hours. Make a sauce of the following: sugar, cornstarch, water, flour and butter (oleo). Prepare a quart of medium syrup and add vanilla or lemon juice for flavor. Remove bag from water when done. Drain. Let sit for a while to set up. Turn out onto plate to serve.
