Ingredients
- 1 lb. brussels sprouts, trimmed and halved
- 4 strips bacon
- 1 tbsp. butter
- 1 medium onion, chopped
- 2 small tomatoes, seeded and diced
- salt and pepper to taste
- sour cream

Preparation
Step 1
Steam sprouts until and set aside. In medium skillet, cook bacon until crisp; drain and set aside. Discard all but 2 tbsp. drippings. Add butter and onion to skillet and cook until onion is transparent. Crumble bacon and add to onion. Stir in tomatoes. Add salt and pepper. Warm brussels sprouts in mixture and serve. Pass sour cream to spoon over sprouts.
