Sandi's Almond & Raspberry Filled Mojo Cookies

These are really easy to make and super delicious! Yummy cookie balls are filled with raspberry jam and crunchy slivers of almonds for a family favorite treat!

Ingredients

  • 2 cups sugar
  • 1 cup shortening
  • 1 cup sour cream
  • 3 eggs
  • 1/2 teaspoon almond extract
  • 5 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Raspberry jam, as needed
  • Almonds, sliced, as needed

Preparation

Step 1

Cream together sugar and shortening. Add sour cream. eggs and almond extract. Mix well.

In separate bowl, mix flour, baking soda and salt. Add to wet ingredients and mix well. Dough will be sticky. Put in plastic bag in fridge for a few hours.

Roll out and cut out circles. In each circle, add 1/2 teaspoon raspberry jam and a few sliced almonds. Fold over like a taco and seal.

Bake 10 minutes at 350°F. Let cool

Glaze:
Mix 1 to 1-1/2 cups powdered sugar, 2 tablespoons milk and 1 teaspoon almond extract. Drizzle on cooled cookies.
