  • 2 cups sugar
  • 3/4 tsp. soda
  • 1 cup light cream
  • 1 1/2 tbsp. butter
  • 2 cups pecan halves
  • 1 tsp. vanilla

Step 1

Combine sugar and soda in 3 1/2 qt. saucepan; mix well. Stir in cream. Bring to boiling over medium heat, stirring constantly. Reduce heat; cook and stir to soft ball stage 234. (mixture carmelizes slightly) Remove from heat; add butter. Stir in pecans; beat till thick, 2 to 3 min. Drop from tbsp. onto waxed paper. (If candy becomes too stiff, add a tbsp. hot water.
