Ingredients
- 1 Pound Bocconcini
- 8 Cherry Tomatoes
- 1/2 cup Chopped Green Pepper
- 1/2 cup Chopped Celery
- 1/2 cup Belgian Endive Leaves
- 1/2 cup chopped Arugula
- 1 1/2 teaspoon lemon juice
- 3 tablespoons olive oil
- salt and pepper to taste
- 2 tablespoon chopped basil

Preparation
Step 1
1. In large bowl combine mozzarella, cherry tomatoes, pepper, celery, endive & arugula
2. Wisk together lemon juice and olive oil. Pour over salad.
3. Season with salt & pepper. Toss until all ingredients are combined.
4. Sprinkle with basil & serve immediately.
