Ingredients

  • 1 (18 ounce) package refridgerated cookie dough
  • 1 (8 ounce) package cream cheese, room temperature
  • 1/3 cup sugar
  • 1/2 teaspoon vanilla extract
  • Fresh blueberries, banana slices, mandarin orange sections, seedless grapes, strawberry halves, kiwi, raspberries or any other fruit you prefer, well drained
  • 1/2 cup orange, peach, or apricot preserves (optional)

Step 1

Preheat oven to 375 degrees F. Roll dough into ball, roll out to fit a 14" Pizza pan. Bake 12 minutes or until lightly brown. Remove from oven and cool on a wire rack. ( I just let it cool in the pan, I seem to have breakage if I try to remove it. )

In a medium bowl, combine cream cheese, sugar and vanilla. Spread over cookie crust. Arrange fruit over cream cheese layer in any design you want. ( THIS IS THE FUN PART.)

The next step can be omitted to simplify the recipe, I only use it if I use something that will brown, say, bananas. :

In a small saucepan over very low heat, make a glaze by heating preserves and water. Brush glaze over fruit, making sure to cover the fruit that will turn dark. Refrigerate until ready to serve.

For some reason this seems to start to deteriorate quickly, so I would recommend making it the same day of the event.
