  • 12 slices PC Blue Menu Turkey Bacon-Style
  • 6 eggs
  • ½ cup (25 mL) 10% cream
  • Half PC Ciabatta Baguette , cut in 1 inch (2.5 cm) cubes
  • ½ cup (125 mL) PC Triple Cheddar Shredded Cheese
  • Half 300 mL-jar PC Sliced Sweet Roasted Red Peppers , drained
  • 3 green onions, sliced
  • 2 tsp (10 mL) PC Fresh Frozen Chopped - Garlic

Preparation

Step 1

1. Preheat oven to 350°F (180°C).
2. Spray 12-cup muffin tin well with non-stick cooking spray. Line the side of each cup with a slice of turkey bacon (it will stick out of cup slightly).
3. In small bowl, whisk eggs lightly. Whisk in cream. In another bowl, combine bread, cheese, red peppers, green onions and garlic. Add egg mixture; let stand for 5 minutes, stirring once or twice, or until egg is absorbed.
4. Divide mixture evenly among the 12 muffin cups. Bake in centre of oven for 18 to 20 minutes or until egg is set.


Chef's Tips

Make ahead: You can prepare the night before. Cover muffin tin with plastic wrap and refrigerate. Bake in the morning, adding an extra 5 minutes to cook time.
