Ingredients

  • 12 Corn tortillas
  • 16 oz tomato sauce
  • 1/2 lb Ricotta cheese
  • 1/4 cup Parmesan cheese
  • 1/2 lb cheddar cheese
  • 1 cup Mexican salsa or picante sauce
  • 1 medium onion, chopped
  • 2 tsp chili powder
  • 3 cloves garlic
  • 2 eggs, slightly beaten
  • 4 oz diced green chilies
  • 1 can red kidney beans
  • 8 oz corn
  • 1 tsp cumin
  • 1/2 tsp oregano
  • 1 lb ground beef

Preparation

Step 1

Saute beef, garlic, and onion. Add tomato sauce, salsa, chilies, chili powder, cumin, corn and kidney beans. Stir to mix. Simmer low for 5 minutes

Combine eggs, ricotta cheese, and oregano.

Arrange tortillas in 9x13 pan.
