Ingredients

  • 1 (10 oz) can diced tomatoes with green chilies
  • 8 oz pepper jack cheese
  • 2 tbsp butter or margarine
  • 2 tbsp flour
  • 1 1/2 cups milk
  • 1 tsp hot pepper sauce
  • 3 green onions, thinly sliced
  • Chopped black olives

Preparation

Step 1

1. In small skillet over high heat, bring tomatoes to boil. Continue boiling until liquid evaporates, about 8 minutes.

2. Meanwhile, shred cheese. In medium saucepan over medium heat, melt butter. Stir in flour until smooth. Gradually whisk in milk and cook until smooth and thickened.

3. Stir in tomatoes and hot pepper sauce, then gradually add cheese, 1/2 cup at a time, stirring after each addition until cheese is melted.

4. Pour into serving bowl and top with green onions and olives. Serve warm.
