Kathy's Marvelous Broccoli Salad

This is an adaptation of a Marvelous Broccoli Salad I found years ago. I changed the type of vinegar and added sesame oil which gives it a little peanut flavor. To change it up you can add toasted slivered almonds and tomatoes or grapes or use green onion in place of the red.

Ingredients

  • Salad
  • 1 bunch broccoli, heads separated into small pieces (5 cups florets)
  • 1 cup grated cheddar cheese
  • 1 medium purple onion, sliced in rings or chopped
  • 8 slices bacon, fried and crumbled
  • Dressing
  • 1/2 cup mayonnaise
  • 1/4 cup sugar
  • 1 tablespoon rice vinegar
  • 1/4 teaspoon sesame oil
  • Optional
  • Toasted slivered almonds
  • 1/2 cup halved cherry/grape tomatoes
  • OR
  • 1/2 cup halved red seedless grapes

Preparation

Step 1

Combine all ingredients for salad.
Combine dressing ingredients. Whisking well to dissolve sugar.
Toss and serve. I think it's better made an hour or so ahead of time, flipping the container to evenly coat the ingredients.
