Ingredients
- 2 C. crushed chocolate mint cookie crumbs
- 1/2 C. butter, melted
- 24 oz. cream cheese
- 3/4 C. sugar
- 5 tsp. cornstarch
- 3 eggs
- 1 egg yolk
- 2/3 C. green creme de menthe liqueur
- 1 1/4 ts. vanilla extract

Step 1
In a small bowl stir together crushed cookies and melted butter till well combined. Press crumb mixture evenly onto the bottom of a greased 9-inch springform pan.
In a large bowl combine cream cheese, sugar, and cornstarch. Beat with an electric mixer till smooth. Add eggs and egg yolk one at a time, beating well after each addition. Beat in creme de menthe and vanilla extract. Pour batter into pan over the crust.
Bake at 350* for 10 minutes. Lower the temerature to 200* and bake for 1 hour and 10 minutes or till the center no longer looks wet. Run a knife around the inside edge of the pan. Turn oven off and return cake to the oven for an additional 30-60 minutes.
