Ingredients
- Cake:
- 1 package yellow cake mix
- 1 can (20.5 oz) crushed pineapple in own juice
- 2 packages (3.5 oz. each) instant vanilla pudding
- 3 cups milk
- 1 cup heavy or whipping cream
- 1/4 cup confectioner's sugar
- 1 teaspoon vanilla extract
- 3/4 cup flaked coconut

Step 1
in 13 x 9 inch pan, bake cake according to package directions.
Meanwhile, in medium saucepan, combine pineapple with it's juice and sugar and cook over medium heat, stirring occassionally until thick and syrupy, about 20 minutes. When cake is done, remove from oven and pierce with fork at one inch intervals. Pour on pineaplle mixter and spread evenly over cake. Cool completely.
In medium bowl, combine pudding mix with milk and blend until thick. Spread over cake.
In medium bowl, beat cream until soft peaks form. Add confectioner's sugar and vanilla. Continue beating until stiff. Spread over cake.
Refrigerate for 24 hours.
Before serving, spread coconut on top!
