Ingredients

  • 5 pound beef roast
  • 4 tbs minced herbs
  • 2 tsp garlic powder
  • 4 cups cherry tomatoes
  • 2 onions, cut into wedges
  • 2 tbs olive oil
  • 2 tbs balsamic vinegar
  • 1 clove garlic, minced

Preparation

Step 1

Heat oven to 4OO degrees. Place beef in roasting pan. Coat with cooking spray. Rub with 3 tbs herbs and garlic powder, salt and pepper. Roast 2O min. In bowl, toss last 5 ingredients and 1 tbs herbs. Reduce oven to 35O degrees. Roast beef 2 hours or until done, adding veggies during last 3O min. Let rest 2O min. before slicing. SERVE & ENJOY...
