Ingredients

  • 3 onions chopped
  • 4 carrots chopped
  • 1 Fennel chopped
  • 2 zucchini chopped
  • parsnips peeled and grated
  • 1/2 head of napa cabbage, chopped
  • 1 can diced tomatoes
  • 1 bundle swiss chard (remove the vein) or spinach chopped
  • mushrooms (portobello, porcini, others) chopped
  • 1 Tbsp Thyme, basil, oregano,
  • salt, pepper
  • balsamic vinegar at the end
  • Optional: black beans and/or potato
  • 1 qt veggie broth
  • 1 qt mushroom or onion broth

Preparation

Step 1

saute onions, carrots, fennel in 1 Tbsp of olive oil and add a bit of salt
then add the cabbage, swiss chard, mushrooms, broth, thyme.

simmer for 1 hour

use an immersion blender if you like it thick
