Ingredients
- 3 onions chopped
- 4 carrots chopped
- 1 Fennel chopped
- 2 zucchini chopped
- parsnips peeled and grated
- 1/2 head of napa cabbage, chopped
- 1 can diced tomatoes
- 1 bundle swiss chard (remove the vein) or spinach chopped
- mushrooms (portobello, porcini, others) chopped
- 1 Tbsp Thyme, basil, oregano,
- salt, pepper
- balsamic vinegar at the end
- Optional: black beans and/or potato
- 1 qt veggie broth
- 1 qt mushroom or onion broth

Preparation
Step 1
saute onions, carrots, fennel in 1 Tbsp of olive oil and add a bit of salt
then add the cabbage, swiss chard, mushrooms, broth, thyme.
simmer for 1 hour
use an immersion blender if you like it thick
