Ingredients
- 3 1/2 lbs. peeled carrots
- 1 1/2 cups sugar
- 1 T baking powder
- 1 T. vanilla
- 1/3 c. flour
- 6 eggs
- 1/2 lb. butter
- powdered sugar

Preparation
Step 1
Steam or boil carrots until very soft and drain well.
While carrots are warm, add sugar, baking powder, and vanilla and whip with mixer until smooth.
Add flour and mix well.
Whip eggs and add to flour mix; blend well.
Add softened butter and mix well.
Pour mixture into baking dish about half full and the soufflé will rise.
Bake in 350 degree oven about 1 hour or until top is light golden brown.
Sprinkle lightly with powdered sugar before serving.
