Ingredients

  • 2 c flour
  • 1/2 tsp baking soda
  • 1/3 c cocoa powder
  • 1/2 c sugar
  • 1/2 c chocolate chips
  • 1/2 sweet (milk) chocolate chips
  • 2 eggs, lightly beaten
  • 1 1/2 c milk
  • 1/4 c butter, melted
  • Chocolate Icing
  • 1/2 c semisweet chocolate chips

Step 1

Preheat oven to 400°. Grease 12 muffin cups or line them with parchment paper cups.

In a large mixing bowl, sift together the flour, baking soda, and cocoa. Stir though the sugar and chocolate chips. Make a well in the center.

In a small mixing bowl, combine the eggs, milk, and butter. Add all at once to the flour mixture and stir until just moistened (the batter should be lumpy).

Spoon batter into prepared muffin cups, filling them 2/3 full. Bake until a wooden skewer or toothpick inserted into the center of a muffin comes out clean, 15-20 min. Remove for oven, cool in pan for 5 min, then transfer to a wire rack.

For chocolate icing, place the chocolate chips in a microwave-safe bowl and melt in short bursts in the microwave. Stir until smooth. Using a teaspoon, swirl the icing thickly over the tops of the cooled muffins.
