Preparation

Step 1

Spread a couple of sheets of newspaper on counter and cover with waxed paper.
Fill a cup of water with ice and water to test pralines.
Place first 3 ingredients in a heavy pot (magnalite) over high heat and stir continuously.; Mixture will begin to bubble and rise a little. Continue stirring and notice when bubbles get larger and start to pull away a little from the edges of pot. Mixture will feel thicker. About 10-13 minutes total.
Remove from heat, stir and drop about 1 t. into ice water. Check if it forms a soft ball. If it does, add vanilla and pecans. Stir a little more until mixture thickens a little. When you drop a spoonful on waxed paper, it should not spread thin. It should stay in a thicker mound. If it spreads then, stir a little more and try again. If mixutre gets hard in the pot, add a few drops of water and put it back on high heat, stirring until it melts again. You can do this as often as necessary. Let them cool and harden then place in dish.
