ZUCCHINI CASSEROLE WITH SOUR CREAM 0 Picture

Ingredients

  • 6 medium sized zucchini cut into small pieces
  • 1/2 c. sour cream
  • 2 T. butter
  • 2 T. grated cheese
  • 1 t salt
  • 1/4 t paprika
  • 2 beaten egg yolks
  • 2 T. chopped chives
  • bread crumbs
  • butter
  • grated cheese

Preparation

Step 1

Simmer Zucchini in covered pan in small amount of boiling water until tender, about 6-8 minutes. Shake pan to keep from sticking. Drain well.

Combine:: sour cream, butter, grated cheese, salt, paprika. Stir over low heat until cheese is melted. Remove from burner.

Stir in: beaten egg yolks, chopped chives. Add the zucchini.
Place in baking dish.
Cover top with bread crumbs. Dot top with butter. Sprinkle with grated cheese

Brown in 375 degree oven or under broiler.
