Ingredients
- 1 lb (450 g) macaroni
- 1 Tbsp (15 ml) olive oil
- 2 Tbsp (30 ml) butter
- 3 Tbsp (45 ml) all-purpose flour
- 1 1/2 C (375 ml) 2% milk
- 2 Tbsp (30 ml) Cheese, Chives & Bacon Dip Mix
- 3 C (750 ml) grated low-fat cheddar cheese
- cayenne pepper
- Sea Salt (Grinder), to taste
- Black Pepper (Grinder), to taste

Preparation
Step 1
Cook macaroni according to package directions.
Preheat Multipurpose Pot (12 cup) over medium heat. Add oil and butter.
When butter melts into oil, whisk in flour. Cook for 3 minutes, stirring constantly.
Slowly add milk, whisking to combine. Stir in Seasoning for Cheese, Chives & Bacon Dip. Bring to a simmer.
Using a wooden spoon, stir in cheddar, one cup at a time. Season to taste with cayenne pepper, Sea Salt and Black Pepper.
Add cooked pasta to pot. Stir to combine.
Tip: Serve with a crisp green salad.
